Lazy gal raw gazpacho

Got this recipe from Salad Days, by a single raw gal who lives in Brooklyn, NYC. It’s her raw staple because it’s so delicious and easy to make.
Blend (2 servings):
5 small tomatoes
1 clove garlic
1 tbs soy sauce
1 tbs apple cider vinegar
4 basil leaves
4 tbs extra virgin olive oil

Salad with spicy tomato dressing

Watercress, red capsicum, avocado, and black olives with a spicy tomato dressing. Verdict: refreshing, light, but gave the salad some depth in flavour.

Asian zucchini noodles

One of my favourite lunches to have on a busy day. My multipurpose food processor is a lifesaver as it has interchangeable cutters.
1 zucchini (capellini size)
3 romaine lettuce leaves
3 baby tomatoes
3 white mushrooms
2 scallions/spring onion

Almond milk in the morn

Blend a cup of almonds in two-three cups of water. Strain the milk from the pulp with a nut milk bag.
