A munchy raw lunch
Sometimes I feel like I live on a liquid diet all day when work is very busy. I start with a large green smoothie with hemp powder, chia seeds, and other bulky raw ingredients, then I come home and make a raw soup — I do have snacks in between, but I don’t count Larabars as a real meal.
Sooooo, I felt like having a raw lunch that I could literally bite into.
This is a crunchy, colourful Greek salad and not like my sad looking one here. I usually make a big batch so I can use the leftovers as sides to future dinners and lunches.
I mashed up avocado, coriander (cilantro), onion, and lemon juice to make a simple guacamole.
Then I took some Romaine lettuce leaves out and chopped up some broccoli sprouts to make a raw wrap. I think it’s important to pat the Romaine leaves dry after washing them — there is no bigger turn off than a cold, drippy raw wrap in cold weather.
I usually fold the stemmy end back onto the filling and then fold the sides in. There you go, a simple wrap that is so delicious. I had to hold it like that to snap a photo because this wrap won’t stay folded on a plate by itself.
This is one of my go-to raw meals, besides soups, nori rolls, and salads. Can I say I’m so glad for Vegan Mofo because it’s making me eat better!!


















Yum now I am craving avocados to make some guacamole!!
haha….I never get sick of avocados….they are a mouthwatering sight….
