A raw staple: nori rolls

I’ve got to thank Vegan Mofo for cleaning up my act in the kitchen. I was dying for nori rolls but the way I eat them is like this — dump ingredients, roll, eat. I don’t even bother to use a sushi rolling mat or even cut them up into bite-sized pieces.

But you know, a new reader might drop by, like how a house guest would and I want to show off a little so I ate my nori rolls like a lady..

Recipe for filling (enough for four big rolls):
1 avocado
1 clove garlic
Dash of black pepper
Juice of half a lemon
Generous pinch of dill
Salt to taste
Julienne half a carrot
Julienne a whole cucumber

I would normally dip my rolls into wasabi and shoyu but the avocado filling was quite salty already.

I had so much carrot that I made a carrot-pear juice. Ooo, and that’s my new batch of vegan kimchi. This was a very raw satisfying lunch…

    I used to make nut pates as fillings but am gravitating more to avo-based ones these days….
