A raw staple: tabouleh

Ever since I found this recipe in Sarma’s Living Raw Food, I just can’t get enough of it. I sometimes make a meal of it or it’s a great side dish.

It’s so simple but so flavourful.

Recipe:
1 head cauliflower, process in food process
3-4 big sprigs of parsley
1 tomato, chopped
1 cucumber, chopped
3 scallions
Juice of one lemon or lime
1/4 cup extra virgin olive oil
Sea salt and black pepper to taste
