A salad for spring

I never liked salads but I’ve been trying my best to incorporate more into my diet.

After browsing numerous raw blogs and trying recipes, I concluded that a great-tasting salad needs the following:

1. Variety, but not too much
Too many vegetables and fruit spoil the pot and you really have no idea what you are tasting.

2. Two tablespoons of an awesome dressing
The idea is to coat, not soak.

3. Moist but not watery
Iceberg lettuce and overly ripe tomatoes tend to ooze a lot water which makes the salad a bland mess; or pouring in too much vinegar or lemon juice. I wouldn’t always avoid them but I can’t stand the thin pool they leave behind.

So, I whipped up something that fit the above criteria:

Two stalks spinach
1 small yellow capsicum
1/2 mandarin orange
1/2 avocado

Raw Goddess Dressing:
3 tbs sesame seeds
1.5 tbs soy sauce
1 tbs ginger
1 tbs agave nectar
2.5 tbs lemon juice
1 tbs apple cider vinegar
5 tbs extra virgin olive oil
2 tbs sunflower seeds
1 clove garlic
2 stalks scallion
1/2 tbs parsley
salt & pepper to taste

It’s a long ingredients list but so worth it and I filled two small jam bottles so I can use it through the week. Adapted from a raw blog whose name I cannot rem, this goddess dressing is truly divine…
