Bubblegum pink pudding

I am finally sick of my usual chia seed puddings. I must say I’m surprised that I stuck it out for so long, everyday, eating this for breakfast or as a snack. But it’s time for a change…

Lately I’ve been wanting a lot of red, orange, and pink in my food so I made this gorgeous pink pudding.

Recipe (in a high-speed blender):
1 cup frozen strawberries
1/2 cup cashews soaked
1/2 cup chia gel (made with 1 tbs of chia seeds in half cup of water, soaked overnight)
3 dates, soaked
1/2 cup water

For the toppings, I put in a banana, blueberries, a sprinkle of plain Go Raw buckwheat, and a dash of bee pollen.

I think I will put less water in because it was kind of like a soup but it was good all the same. A thicker consistency would be better, methinks…
