Ekiden brekkie

Last Saturday morning, I took part in an Ekiden (relay) race with the Japan Vegan Runners Club in Shinkiba. To prepare for it, I made a raw “energy” breakfast: a raspberry hemp smoothie with a power-packed cashew-chia pudding.

Smoothie recipe (in a high-speed blender):
2 cups frozen raspberries
1 banana
1 tbs hemp powder
2 tbs hemp seeds
1 tbs raw cacao
1 cup water

Pudding recipe (in a high-speed blender):
1/2 cup chia gel (2 tbs chia seeds soaked in 1/2 cup water)
1/2 cup soaked cashews
2 soaked dates
1 cup frozen strawberries

I topped the pudding with just blueberries and chopped banana.

Gawd, it was so yummy with all the berries in there…I ate this at 9am and only felt hungry around 130pm. Did it help me run like the wind? I hope so! LOL! I was nervous but I had enough energy. I was surprised how tired I was in the evening even though I ran only 3km. I had a a tough hoop fitness class the day before so it was probably due more to that than the run. But I certainly felt I never ran as fast as I did at the Ekiden. I’m more of a long distance runner so speed always makes me feel apprehensive. Nevertheless, it was an awesome experience.

Thanks Ruby! Once you let chia seeds into your life, you won’t turn back ;-)
