Harvest soup for autumn

One of my fave raw meals is a simple soup and salad combo. I got the recipe from Kristen’s Raw blog, and oh my, did it tantalise my taste buds. It’s one of the rare soups I’ve encountered that doesn’t have avocado, but I think it would taste fantabulous with some avo. What I like about this soup is you don’t need fancy-schmancy herbs or ingredients and it’s really full of flavour.

I paired it with leftover tabouleh salad. Beautiful.

Recipe:
1 cup water
1/2 large zucchini,
1 medium tomatoes
1 stalks celery
2 cups carrot
1 clove garlic
2 tsp Himalayan crystal salt
1 tablespoon fresh onion
1/2 teaspoon black pepper
1/2 cup extra virgin olive oil
