High raw buckwheat noodle salad

Once in a while, I go “high raw” instead of 100% raw for lunch. I really do best in terms of alertness and focus when I eat raw from morning till evening, but I do get a teensy bit tired of it. So I add a healthy cooked component to give myself variety in terms of texture. I used to think all I needed was a variety in flavour (or temperature) but texture is very important to me too.

Today’s high raw lunch is soba, or buckwheat noodles, with a salad and a raw Asian dressing. I skipped my usual avocado because the sauce is pretty fatty.

Recipe:

For the salad:
Small fistful of soba (boiled; drained; rinsed with cold water)
1 cucumber, julienned
1/4 carrot, julienned
2 cups baby leaves
I tomato, sliced
Handful of spring onions, chopped

For the sauce:
1 tbs almond butter
1 tbs olive oil
1 tsp sesame oil
1 knob ginger
1 clove garlic
1 tsp chilli flakes
2 soaked dates
1 tbs shoyu
1 tbs water

Toss all the ingredients well so the dressing coats everything nicely. Tuck in….It was really satisfying but I did get a mite sleepy an hour later. I could deal with it because it wasn’t really a thinking day at work for me….

Japan brings out my inner kid. I got this tiny Hello Kitty cup when I had a dessert at Puroland (a Sanrio amusement park for children) with a friend who is a big Sanrio fan. I use this cup for sauces or when the non-raw fiance’s mum visits and needs milk for her coffee or cereal.

  1. That looks really good. I’ve never tried putting dates in salad dressing before. Where do you get the dates from?

    I get my dates from Nissin in Azabu Juban. I like using dates as a sweetener….I usu soak them a little before chucking them into the blender. Makes it easier to blend.

    Love the kitty cup too! (I know, Japan seems to bring out the same in me, I love getting the kitty-chan specialty mugs when we find them around Japan).
