Lazy gal raw gazpacho
Got this recipe from Salad Days, by a single raw gal who lives in Brooklyn, NYC. It’s her raw staple because it’s so delicious and easy to make.
Blend (2 servings):
5 small tomatoes
1 clove garlic
1 tbs soy sauce
1 tbs apple cider vinegar
4 basil leaves
4 tbs extra virgin olive oil
Black pepper to taste
Pour over chopped capsicum, cucumber, and apple. Any chunky veggie would do but you should add apple as it makes this dish extra special.
