Leftovers bento
When I made this, I was in such a rush — I was lucky to have sundried tomato pesto pate and marinated vegetables sitting in the fridge when I made this.
Marinated vegetables recipe:
1 broccoli, florets only
1 tomato, diced
1/2 red capsicum, diced
1/4 large white onion
Juice of one lemon
Sea salt to taste
2 tbs extra virgin olive oil
Let it stand for at least two hours to let the flavours mix. I always like making a gigantic bowl of this stuff so that I can eat it over a few days and not have to whip up a salad. There are days where I really don’t feel like lifting a finger to prepare food.
I swear this took all of three minutes.
