Not just another salad

Lately, I’ve been keeping things very simple — juices, smoothies, chia puddings, salads, and raw soups. Perhaps it’s got to do with a lack of time which decreases my desire to mess around in my kitchen. Also, the non-raw fiance has been gone for a five-week business trip so I have even less motivation to whip up fancy raw food (eg. desserts).

If you noticed, I haven’t been making bentos at all. I do apologize but my schedule has changed in the sense that I no longer need to eat lunch on the go so this blog’s title has become quite a misnomer! I will post bentos here if I do make them but I’m not so crazy about bento-making that I would put stuff into a bento and then eat it at home…

Back to my daily eats: despite my decreased kitchen creativity, I try not to neglect myself and would put in some effort despite having a million things to do.

This huge salad with my accidental thousand island dressing had a side of simple nori rolls. I bought these smaller cut nori sheets (meant for onigiris, or rice balls) sometime back and they’ve been languishing in my pantry so I thought this was a good use for them.

I rolled red capsium and avocado slices in the nori sheets and dipped them into the dressing.

I don’t think this dressing is a direct replica of my accidental thousand island one. I remember I used cashews instead of macadamia, left out hemp seeds, and put a pinch of chilli powder into this one.

Another development: I seldom refer to recipe books these days and adapt them from memory and I might even get a brand new something!!
