Raw blueberry pie with chocolate sauce and strawberries

Pure decadence.

I made Alissa Cohen’s raw blueberry pie and I loved it. But I like variety and non-raw fiancé wasn’t around to help me eat it, so I whipped up some vegan chocolate sauce (two tbs of cocoa powder and a huge drizzle of maple syrup) and poured it over a slice. I also decorated it with some plump strawberries. It became a whole new pie altogether.

Recipe adapted from Living On Live Food by Alissa Cohen:

Crust ingredients (in a food processor):
1 cup macadamia
12 dates
2 tbs flax seed powder
1 tbs coconut oil

Filling (in a food processor):
11/2 punnets of blueberries
2 bananas

The crust is a bit hard-going but just keep pulsing until the oil from the flax seed powder starts to ooze and it’ll make everything stick together. Press the crust into a pie mold and then pour the filling in. Freeze for three to four hours.

I remember I was feeling a bit forlorn when I made this (this was probably in brr cold March) but my mood lifted once my lips touched the chocolate sauce! I didn’t want to make a complicated pie that required layering or lots of ingredients, so this recipe was perfect.
