Raw mint ice-cream brownie tart

We had an abundance of mint in our garden so I cruised around the Internet for recipe ideas. Mint chocolate chip ice-cream was a childhood fave, so I thought I would replicate this flavour as best as I can. It turned out to be a light pale green, as opposed to a bright florescent shade. Though a couple of drops of liquid chlorophyll would fix that, I wasn’t sure if the green taste would show up.

Ice-cream filling:
20 mint leaves
1 cup soaked cashews
4 tbs agave nectar

Brownie tart base:
1 cup soaked walnuts
1 cup soaked sunflower seeds
6 dates
1 tbs maple syrup
2 tbs unsweetened cocoa powder
1 tbs vanilla essence
Dash of nutmeg
Dash of cinnamon

Blend the ice-cream filling in a high-speed blender and the tart base in a food processor. Walnuts are very high in fat so that’s why it gives an oilier texture (hence, more brownie-like) than other nuts.
