Raw orange chocolate ice-cream tart

Photobucket

I love fruit with chocolate and I had a spanking new tart mold dying to be fondled, so as my wind-down me-time activity, I did some un-baking the night before.

I refer to it as “ice-cream” because I didn’t use raw cacao butter or lecithin (impossible to get in Tokyo) to make it more cake-like and able to stand up on its own in the fridge or at room temperature. Basically I just froze the whole tart and when I wanted to eat it, I put it in the fridge to soften a little for 20-30 min — voila, ice-cream in a tart! To keep it well, I have to store it in the freezer.

Tart base:
1/2 cup walnuts
1/2 cup pecans
7 small dates
1 tbs dark agave nectar
1 tbp vanilla essence
Several drops of almond essence
1 tbs coconut oil
2 tbs carob powder (non-caffeinated substitute for cocoa powder)

Orange filling (layer this first and freeze for 30 min before the chocolate ice-cream):
Juice of one mandarin orange
Several small pieces of zest from the same orange
1/2 cup cashews
1 tbs coconut oil
1 tbs vanilla essence
1 tbs dark agave nectar

Chocolate ice-cream layer:
1 tbs unsweetened cocoa powder
1/2 cup cashews
1/4 cup macadamia
2 tbs dark agave nectar

In future, I would use less dates and make a less crumbly tart base with soft pulp leftover from pecan milk. But, it was lovely anyway despite leaving a trail of nuts behind as I served it.

aye you didnt give the procedure…you blend each layer separately i suppose?

  2. admin says:

Oh yes. Blend the tart ingredients in a food processor and the cake layers in a blender.

Thanks, Susan. My non-raw boyfriend is always surprised when I present a piece to him, “I can’t believe it’s got no milk or flour!”
