Raw pineapple coconut cheesecake

This one just makes me go ooh-la-la. The non-raw boyfriend demands for seconds when this appears on the dinner table.

Recipe:

Crust (in a food processor):
1/2 cup walnuts, soaked
1/2 cup sunflower seeds, soaked
8 dates
1 tbs maple syrup
Dash of cinnamon and nutmeg
Pinch of sea salt
1 tbs coconut oil

Filling (in a blender):
1 cup coconut milk (made with 2 cups coconut flakes and 1 cup water; then strained)
1 cup cashews
6 chunks of frozen pineapple
2 tbs agave nectar
1 tbs maple syrup
Dash of vanilla essence

Freeze for at least 2-3 hours. When you take it out, let it melt a little so it would be super creamy like ice-cream.

    I heard about this site through a raw food friend in TKY.
    It’s such a pity we never got to meet up / meet at any MeetUps. (TKY raw food & veggie lovers).

    I absolutely love your site and I love photos of all these yummy dishes you put out on Raw Bento.
    Im now in Singapore and loving all the yummy fruit I can get. Coconuts almost everyday… is that too much of an indulgence?

    I’m jealous you get to drink coconut juice daily. I don’t think that’s an indulgence :)

    I haven’t really gone for the Tokyo raw food & veggie lovers meet up events lately. But will keep a look out for you if there is one in the future. Understand that the girls behind the meetup group are facing some changes in their raw business and have not organized meetups recently.
