Raw purple ice-cream

You’ll be surprised at the ingredients list as I intended this to be a pink ice-cream and not purple. My guess is when raspberries are oxidized, they turn purple. Fun.

Raspberry coconut vanilla ice-cream (serves 2):
1 cup frozen raspberries
1/2 cup low fat coconut milk
1 tbs vanilla essence
1 cup cashews
1 tbs coconut oil
2 tbs maple syrup (not raw)
1 tbs dark agave nectar

Blend till smooth and freeze for three hours. It should be a creamy consistency just like commercial ice-cream. I topped it with dried blueberries and crumbled a couple of pecans. A guiltless Saturday ice-cream lunch…
