Simple vegan blueberry pancakes

Although I love having a juice and/or smoothie for breakfast, I sometimes crave a solid brunch on the weekend. Perhaps it’s more the feeling that I love than the actual food — a slower rhythm to move to, a break in routine, and just feeling lazy.

Recipe:
1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup almond milk
1 tsp baking soda
1 tbs olive oil

I whisked this up in a bowl and used low heat on a non-stick pan to make the pancakes. Then I topped them with blueberries and drizzled maple syrup over.

Did it fulfill my brunch craving? It sure did but I don’t think these will make a frequent appearance in my kitchen…
