Sunday bliss…with raw ice-cream & strawberries
I made one serving because I don’t like keeping rock hard raw ice-cream in the fridge. Defrosted ice-cream ain’t the same.
Recipe (in a blender):
1 cup cashews, soaked
8 dates, soaked
3 tbs cocoa powder
1 vanilla pod (tiny)
Pinch of vanilla essence
1/2 cup water
Let this smoothie chill in the fridge for at least six hours and then pour it into an ice-cream maker. Since it was such a small portion, the ice-cream firmed up in less than 10 minutes, instead of the usual 20 minutes. Yay…
I scooped it out into a small bowl and topped it with chopped strawberries. It was a gorgeous Sunday so I sat on my terrace and slowly devoured it while gazing at the flowers in our lil’ garden.
It’s these moments of personal bliss that are so important for the soul. Yup, raw ice-cream has a lot of soul-inducing power.
And raw brownies, too.

It’s pretty easy to make too. I’m chilling another batch of chocolate smoothie mix to make into ice-cream before I head out later.
wowee I love raw ice-cream. What I like to do though is make a huge batch then when I want to scoop some out I defrost it in the fridge for half an hour. Works a treat!!!

How do you get the ice-cream to become so smooth? I tried making ice-cream with cashews before but could never get it blended to this kind of texture. Somehow there were still remnants of the cashew nuts. Has this got to do with the type of blender I use?
I use a cheap Japanese brand called Zojirushi. I think you just need to add more water or nut milk to get things going and also you should run it for a minute or two, let your blender rest, and repeat till you get a super smooth texture
