Superfood raspberry chocolate sandwich
I haven’t posted a raw dessert in a while because I’ve just been making the ones that I love. Raw chocolate truffles are a staple for sure and so easy to make and I’m all about saving time, as you can see.
But once in a while, I do like to experiment and try new recipes. I saw a picture of a raw chocolate ice-cream sandwich on a blog but I didn’t have all the ingredients for that one, so I came up with my own.
For the chocolate sandwich, in a food processor:
1 cup walnuts
1/2 cup leftover pumpkin seed pulp from milk
3 tbs cocoa powder
2 tbs goji berries
1 tsp maca powder
10 dates, soaked
Dash of nutmeg and cinnamon
For the raspberry cream, in a blender:
1 cup frozen raspberries
1 cup soaked cashews
3 tbs maple syrup
Dash of vanilla
Press the base onto a cake mold and then pour in the raspberry cream onto it. Let this freeze for four hours and then press the rest of the chocolate sandwich on top. Freeze again for another hour and it’s ready to eat. Again, I’ll like to mention that I let my frozen raw desserts thaw for 20 – 30 min before I consume them. I may leave it outside or in the fridge. It really depends how frozen the dessert is and may even take an hour for it to be nice and creamy.

And it def tastes better than it looks…. this is a “messy” looking pie…
