Teaching bento
I teach English part-time and occasionally I don’t have time between lessons to go home for a nice raw meal.
So, I take out my bento and throw together a yummy lunch on-the-go.
Zucchini pasta with brown mushrooms and carrot hearts. I made a creamy hemp basil sauce to go with it, plus a couple of dates stuffed with cashew butter for dessert.
Alas, the bento couldn’t close properly because of the hemp sauce, so I replaced it with a small cup of tabouleh.
This is a typical bento meal that I tote along in my bag. I also usually take a large green smoothie or juice with me.
Recipe for raw creamy hemp sauce:
1/4 cup shelled hemp seeds
2 tbs cashew butter
5-6 fresh basil leaves
1/4 tsp thyme
1 tsp oregano
Juice of half a lemon
Sea salt and black pepper to taste
Touch of water
