Tuscan mushrooms
Sometimes I get so caught up with new recipes I forget old faves like this one.
Marinate chopped white mushrooms in olive oil, salt, and black pepper.
Add chopped basil, red bell pepper, and baby tomatoes. Mix well.
Let it sit for a few minutes until the mushrooms look less “white” and more oily. I was dismayed when I shovelled the last bit into my mouth — it was that good.
